Chicken Cobbler Casserole

Just a quick post to share a new and DELISH recipe with you! It is Chicken Cobbler Casserole and I got it from the Southern Living Homestyle Cookbook. Hope you enjoy it as much as we did!
6 Tbsp. melted butter, divided
4 cups cubed sourdough rolls (I used sourdough bread as the store didn't have rolls)
1/2 cup grated Parmesan cheese
2 Tbsp. chopped fresh parsley (I used the kind you buy already chopped-way easier!)
2 medium size sweet onions, sliced (I discovered my chopper didn't work AFTER the onions were already in it!)
1 8 oz. package sliced fresh mushrooms (again, I used canned pieces and stems-just as good!)
1 cup white wine (you can substitute chicken broth or buttermilk here)
1 (10 3/4) oz can of cream of mushroom soup
1/2 cup drained and chopped jarred roasted red bell peppers (next to the olives in the store!)
2 1/2 cups shredded cooked chicken
Preheat oven to 400
Toss 4 Tbsp. melted butter with next 3 ingredients; set aside.
Saute onions in remaining 2 tbsp butter in a large skillet over medium high heat for 15 min or until golden brown. Add mushrooms and saute 5 minutes or until bubbly. Stir in wine and next 3 ingredients; cook, stirring constantly, 5 minutes or until bubbly. Spoon mixture into a lightly greased 9-inch square baking dish. Top evenly with bread mixture.
Bake at 400 for 15 min or until golden brown.



What a pretty meal!
