What a Weekend

So this was one of those weekends that was just fun, nonstop!! On Friday night we cooked dinner at our house for our friends Jay and Kim. I had to leave work early with a headache and my wonderful husband ended up having to do almost everything. What a star!

I used my good china, just for fun, and made peach daiquiris. Unfortunately, the bottom fell off of the blender so we only got one round each and I got covered in peach! Forrest made "my specialty" , Balsamic Chicken, and Jay brought a tasty salad. Here is my chicken recipe, compliments of Joy Rhea.


Balsamic Chicken:
1 family pack boneless skinless chicken tenders
1 bag spinach
1 can pieces and stems muchrooms (omit if you hate mushrooms)
2 (or more) Roma tomatoes (sliced)
1 packet Italian dressing mix (you will need Vinegar and Balsamic Vinegar)
Parmesan cheese (like in the green can)
Angel hair pasta (I use whole grain)

Pour entire bag of spinach in bottom of greased 13x9 Pyrex (it will look like a lot but go with it)
Salt and pepper the chicken and put them on top of the spinach
Sprinkle Parmesan cheese on top of chicken (I usually pour, not sprinkle :) )
Drain mushrooms and pour them over the chicken.
Place tomato slices on the chicken
Prepare Italian dressing mix according to directions except substitute Balsamic vinegar when it says to use water. Pour this over the chicken.
Bake at 350 for 40-45 minutes and serve over pasta.

On Saturday we got up and went to Birmingham for the dental school crawfish boil. It was SUPER hot and I was forced to stand underneath AUBURN tents, but it was still good, summery fun! Some of Forrest's classmates brought their dogs and it made us wish that we were able to bring Sonny!




Madison was laying next to the frozen crawfish in the ice. She was the smartest one at the party!


After the boil we went to lunch at Rojo (because I don't do crawfish). Forrest had gotten an AWESOME coupon for Rojo off of http://www.restaurants.com/ (yes, we are HUGE coupon fans-check back often for some of my stellar finds) so we were anxious to use it. His Mahi tacos were AMAZING and I had a Mediterranean quesadilla-delish. As a bonus, my friend Beth from law school was there! What luck!
After lunch we did a little furniture shopping. Our living room in our house is currently empty (so we call it the ballroom) and we are itching to finish it! We found one that we REALLY love, especially because we could customize it with different fabrics! It is by Paula Deen-who knew that she did furniture??? Check her out at http://www.pauladeenhome.com/. Can you guess which one we like?? I want to look around a little bit before we pull the trigger, but I'm very excited about this possibility! After shopping we needed a quick ice cream pick-me-up before heading to Mass at OLS and then stopping at my grandmother's to pick up some goodies (aren't grandmothers the best?). Then we were off to Nabeel's (YUM) for dinner with my friend Jennifer from law school, who was one of my bridesmaids, and her bf Phillip. I love dinner out with friends! Once we got back to Gadsden we packed up the car and the dogs and headed up to my family's lake house. We like to wake up where we want to be, so we don't mind arriving late at night! We were able to spend a BEAUTIFUL Sunday on the water with Sonny and Ruffles, complete with a kayak ride for Sonny, a boat ride with our friends the Condras, and lots of laying out and reading time for the both of us. What a way to relax!

Then again we were off--this time to the grocery store for my Sunday shopping. I try to only go grocery shopping ONE day a week-meaning I have to be super organized but I like that-you should see my list--it is killer. I am an ALDI shopper, and you should be too! They have GREAT merchandise for very low prices! I'm hooked! As I said before I also am a coupon lover (Aldi doesn't do coupons) so I get the things that I have to have a specific brand of (kitty little, toiletry items, etc) at Wal-Mart with my intense coupon collection. This week my total was about 88 dollars pre-coupons and it ended up being 57 something after coupons! This was a HUGE week for us grocery wise but when there are items on sale and I have a coupon AND I will be needing the item, I go ahead and get it for as cheap as possible. Ok that is my tanget on coupons. Anyway, after showing Wal-Mart who's boss, we went to my cousin John Rollins' graduation party and had a great dinner with family and friends, that included CAKE!!!

See, what a weekend indeed! Hopefully we can have just as fun of a week!
