Last night we finally dug into the taco soup I made on Sunday from my friend Lauren's recipe. I wanted to let it sit for a day or so because to me, soup tastes better a few days after it is cooked! We invited Davis over and had a great dinner together!

2 lbs ground beef, browned and drained
3 cans beans (any kind, but I used 1 can each of kidney, chili, and black beans)
1 large can corn
3 cans Rotel (I used 2 Rotel and 1 regular diced tomatoes, which is how Lauren does it)
1 package taco seasoning
1 package ranch dressing mix
2 small cans black olives (I added these myself)
1 cup water

1. After browning the meat, pour it in a large pot and stir in the taco seasoning and ranch mix to get the meat nice and coated.
2. Pour all cans into the pot, with their liquids
3. Add 1 cup of water, if you think it needs a little more juice
4. Bring to a boil for about 5 minutes, then simmer for 20-30 minutes!
5. Serve with whatever topings you like!

Steam rising off the soup--it smelled just like a taco!

The finished product, complete with cheese and fritos! I think a scoop of sour cream would have been great stirred in it as well!
