Cake Batter Blondies

I am helping my mom host a recommendation writing party for the alumni of our sorority in Gadsden tonight and I told her I would make a dessert. Again, I clearly forgot that my oven is still not working, but I always like trying new desserts and I needed something that I could make the night before, so a dessert it was. I stumbled upon a picture of a cake batter blondie on my friend Erin's blog but she didn't have the recipe listed so I did what any normal person would do--I googled it. I found a really yummy looking recipe on (which I am now obsessed with, btw) and tada--here they are!!

Ingredients (all purchased at ALDI)
1 yellow cake mix (although I bet you could use any kind--think of the options!!)
1/4 cup oil
1 egg
1/2 cup milk
1/4 cup rainbow sprinkles (funfetti cake mix would also achieve the same result)
1/2 cup white chocolate chips (optional, but oh so good)

Combine 1st 3 ingredients in a large bowl and then add the milk slowly. The add sprinkles and chips.

It will be very hard to mix because the batter is really thick (a strong husband is very helpful at this stage). Pour into a brownie pan. It really doesn't "pour" so you may have to use your fingers.

Bake at 350 for 30 min or until the edges start to brown

Stella was watching me mix these up from under the kitchen table. Doesn't it look like he leads a stressful life??

  1. I love using cake mix to make fancy desserts! I make a lot of cake mix cookies and Paula Deen's Gooey Butter Cake with cake mix. YUM!
