2 Recipes This Week

Stuffed Bell Peppers
I modified this recipe a little from the link about. They were DELICIOUS and super good for you!
3 bell peppers, cut in half and cleaned out
brown rice (I made 2 servings)
5 oz grated romano cheese
1/2 onion chopped
3 cloves garlic
Italian seasoning to taste
fresh mozzerella

Cook the rice according to package direction. In large bowl, combine ride, romano cheese, onion, garlic, and seasoning. Stuff into each pepper and top with slice of fresh mozzarella. Bake at 350 for 30 min or until cooked throughout.




Mud Pie Cookies
I got this recipe from "Cake Mix Dr" and changed the name and left out the walnuts. I thought they were super tasty!

1 box Devils Food Cake Mix
1 stick butter, melted
2 tsp vanilla
2 eggs
1 cup chocolate chips

Mix first 4 ingredients with electric mixer. Fold in chocolate chips until equally distributed. Drop heaping teaspoons of batter onto a cookie sheet 2 inches apart. Bake for 10 min at 350. Cool and enjoy!

Summer Time

This week we welcomed the first week of summer with a bang!! Forrest started working this week and he really enjoyed it! I am so proud of him and know he will enjoy working much better than school! To celebrate his graduation, Julie and Lance took us out to Highlands Bar and Grill in Birmingham on Wednesday. Neither Forrest nor I had been there so we were thrilled. Eating with the Smiths is always fun, especially because they will eat just about anything--just like us! Because of our adventurous tummies, our dinner looked a little bit like this:

Voted the best dessert of the night: olive oil cake

On Friday I woke up to a fun surprise: our refrigerator was leaking into the basement (coincidentally, right into Forrest's car wash bucket!). I spent most of the day at home trying to deal with it. Luckily it didn't ruin my floors and it was an easy fix--we just needed a new filter, thank goodness! That evening we headed up to the lake for a peaceful night together. There is something about doing nothing at the lake that is just better than doing nothing at home! We ordered a pizza, rented a movie, and just vegged out all night. After the whirlwind wedding weekend the previous weekend, we needed a night to chill. We spent most of the afternoon lounging outside on the pier and playing with the dogs.



That evening we had plans to attend the Serendipity dance. Forrest and I are members and my sister was being presented! The LeBlancs came as our guests and we had a wonderful time, from the pre-"prom" dinner at the Courtyard to dancing the night away in the front row!

We stayed out WAY too late on Saturday so it was a good thing we had gone to Mass on Saturday evening because I don't think I would have made it to the morning service! Forrest got to relax most of the day but I had to stock up on groceries (I skipped last week so we were LOW on food) and I was going to the Anniversary tea for the Bal d' Or (the debutante ball). It was a nice afternoon to sip on punch and much on tiny cakes and sandwiches with mom and the other ladies. That evening we had dinner at my parents' house as usual and headed back home early because I was so exhausted from a weekend full of fun! Hope you had a nice weekend as well!!

Father's Day

This weekend we were happy to honor our fathers! We spent a lovely afternoon at the Bailey's and the evening at my parents'. It's a good thing our dad's like to eat! Thanks to our dads for being such amazing role models and raising us to be who we are today! We love you!

I brought this dessert to the Baileys to help mark the occasion. I must say it was a hit and easy to make!

5 layer dessert

Ingredients:
    Crust
  • 1 cup pecans, chopped
  • 3 tbsp white sugar
  • 1/2 cup butter
  • 1 cup flour
  • Cream cheese layer
  • 1 8 oz package cream cheese
  • 1 cup powdered sugar
  • 1 cup whipped cream or cool whip
  • Vanilla pudding
  • 1 package of instant vanilla pudding (5.1 oz or 144 g)
  • 3 cups milk
  • Chocolate Pudding
  • 1 package of instant chocolate pudding (5.1 oz or 144 g)
  • 3 cups milk
  • Last layer
  • 2 cups whipped cream or cool whip
  • shaved chocolate
Directions:

  1. Preheat oven to 350 F degrees.
  2. Spray a 9×13 inch baking dish with cooking spray.
  3. In a mixer mix all the crust ingredients together and press the mixture into the prepared baking dish.
  4. Bake it for about 20 minutes.
  5. Prepare the vanilla pudding as per the instructions on the package.
  6. Prepare the chocolate pudding as per the instructions on the package.
  7. In a mixer add the cream cheese, powdered sugar and the cup of whipped cream. Mix until light and fluffy.
  8. Let the crust cool. Spread the cream cheese mixture over the crust evenly. Spread the chocolate pudding over the bottom crust, then the vanilla pudding. Top with the whipped cream and sprinkle with the chocolate.
  9. Refrigerate for a couple hours so that it sets.

Becoming the Hedgspeths

This weekend we were honored to be a part of some of our best friends' wedding!! Since a picture is worth a 1000 words, I will just let the pictures I took tell the story. Congrats Jay and Claire!!

 That evening, we attended the rehearsal at 1st United Methodist and then went to the rehearsal dinner at the Country Club.

Laughing at all of the sweet toasts. Seriously, EVERYONE got up and said something. It was so sweet and precious. Even Forrest and I gave a toast off the cuff!

After the wonderful dinner. Seriously it was the BEST rehearsal dinner ever! Great food,  toasts, drinks, the works!

 On Saturday while the guys golfed, the girls got pampered at The Avenue Spa.
A group of ladies threw a spa day party for the bridesmaids! We got our nails and toes done, PLUS a massage! They also provided breakfast and lunch AND gave us a little goodie bag of wedding day essentials!! It was so much fun!
 Then, it was off to the church for pictures!!

 After a sweet wedding (Jay teared up when she came down the aisle--Husband, you owe me 10 bucks) and an amazing send off to O Happy Day, we headed to the reception at the Gadsden Country Club.

Not only did they serve Yellow Hammers in personalized cups just like at Gallettes, but they also had the most amazing belinis!

3 years

Yesterday, June 12, Forrest and I celebrated our 3rd wedding anniversary! My, how time flies! Forrest actually started the anniversary hoopla 3 weeks ago. When I got in the car one morning to head to work there was a bow and a note inside wishing me a happy anniversary and saying "I know you will like this". What? I got the car in December--what gives? Well when I turned on the car the radio was on XM. Hooray! When I got the car it had a free XM subscription but I didn't renew it because I was too cheap. Wasn't that thoughtful? The next weekend, when we returned home from his graduation, I found a package in the mailbox. It was my 2nd anniversary present--a pair of Ray Ban sunglasses! I wanted to get a pair for the cruise but I couldn't find the right ones. I apparently have a little face and so I needed the junior sized glasses and they were hard to locate! I gave up when we went on the cruise and forgot all about them until that night! So sweet!! I got the 3rd anniversary present on our actual anniversary--2 huge agapanthus plants. I have loved these plants ever since we saw them in LA and can't wait to have them in our yard!

My gift to Forrest was a giant framed map. We saw one like this at a friends house and thought it was super cool. The best part of the present was getting to put pins in all of the locations we have been together and making our "Must See" list for the future!

For our actual anniversary we decided to have dinner in Birmingham and Forrest really wanted to eat at Flip Burger. We passed it on the way to Pink Berry on his graduation day and I went on and on about how yummy it was, so we decided we would eat there to celebrate. It may not have been some grand gourmet eatery but MY OH MY was it delicious!!

Afterwards we walked around the Summit and Forrest even saved room for more Pink Berry. I think the best part of the night was driving back home and reflecting on our three years together. So much has happened and I am so grateful that God gave me Forrest to share it all with. I can't wait to see what the next three years holds!
